TANK CONDITIONED LAGERS
These beers take time, and dispensing is no exception. Enjoy the wait! Served as a 3 Stage or Milk Pour (-$1) upon request. We use specialty dispensing taps to serve our Lagers. This faucet allows us to pour liquid multiple different ways. 3 stage is our house standard "hard pour" procedure to allow the beer to breath and build foam. Milk pour exaggerates this process in one pour, softening the carbonation even more and accentuating the sublety of Lager brewing.-
Nyayo (Knee-Eye-Oh) Lager 4.2% - $6 14oz
From the Swahili word "footprints", Nyayo is an organization that was founded by one of our Mug Club members Mike McKenna that provides funds for specific projects for two small orphanages in Uganda. The recipe design was an effort to clone one of Mike's favorite lagers, Guiness' Harp Lager. Two English pilsner varieties, flaked corn, and a touch of chit malt make up the grist. Decoction mashed and hopped with hallertau Mittelfru, German Saphir, and New Zealand Wakatu. Fermented with German lager yeast, this beer has a full mouthfeel with an underhanded bitterness and the slightest citrus zest aroma. Deception Dark Lager 5.1% $6 14oz
Cooler weather calls for darker beers, but dark doesn't have to mean heavy! Deception is a medium bodied dark lager with subtle coffee and roasty chocolate notes. A grist composed of equal parts Pilsner and Munich malts, complimented by a touch of specialty malts: chocolate wheat, carafa 3 special, Munich 120, and chocolate malts. Kettle hopped with Czech Saaz and fermented under pressure with our house German lager yeast; naturally carbonated from fermentation and appropriately lagered for 5 weeks. Tapped/Canned 1/27/23

Heikrisp Petite Pils - 3.8% $5 14oz
We went seeking the highest level of crispness, fortunately we found HeiKrisp! The simplest grist of pilsner malts and a pinch of white wheat, hopped with a blend of NZ Wakatu and GR Saphir for Meyer lemon and fresh lime citrus aromas. Fermented dry and fast. Tapped 12/16/22

Kellerpils 4.4% - $6 14oz
The freshest style of Lager is Kellerpils, which is typically consumed while the beer is young and still conditioning. The mash consists of domestically grown and malted Euro-style pilsner malt along with a touch of Chit malt, decoction mashed, and kettle hopped throughout the boil with German Hallertau Blanc and GR Huell Melon. Fermented with a Lager yeast cultivated over centuries from the last functioning Bavarian Monastery Brewery. Inherently bitter and crisp with classic noble grassiness and underlying aromas of cantaloupe, white grape, and over-ripe strawberry. Tapped/Canned 12/13/22

Sanity Czech - Czech style Pils - 5% $7 14oz
US East Coast grown and malted Riverbend Czech style pilsner and Chit malt make up the grist for this year's rendition. Decoction mashed and hopped throughout with Czech Saaz; fermented under pressure with Czech Lager yeast and naturally carbonated. Crackery malt and a firm bitterness with zippy carbonation. BioTropics Tropical Wheat 6% $6 16oz Can
Premium Pilsner malt and a triblend of malted/unmalted wheats build a protein rich and stable haze for this Biotransformation experiment! Cascade Hash added to the mash to unlock Thiol-precursors from the malt, and a very small whirlpool addition of NZ Hop Revolution and Phantasm grape skins to provide oils, bound thiols, and terpenes for a special yeast to metabolize, biotransforming those compounds into fruit forward aroma and flavor! A soft mouthfeel and a pillowy dome deliver guava and grapefruit zest. Tapped 1/18/23

This 2021 throwback collab with Vallensons out of Texas was retooled with some fresh processing and materials! A blend of pilsner and 2 row barley, oats, and chit malt make up the hazy base for our favorite New Zealand hops to shine. Mash hopped for a balanced bittering addition, Wakatu towards the end of boil, and a huge low temp whirlpool charge of Revolution blend, Pacific Sunrise, & Phantasm. Fermented with Cosmic Punch Thiolized yeast, and a fat dry hop addition at the end of fermentation with Revolution blend and Pacific Sunrise. Fresh Mango and crushed Tangelo on the nose, with silky Papaya/Passionfruit mid palate, finishing full with a noticeable but not lingering bitterness. Tapped/Canned 3/21/23

A classic blend of 2Row, Pilsner, flaked oats & flaked wheat lay the foundation for a layered hop load! Mash hopped as a bittering charge, late boil addition of USDA Experimental 074, and a low-temp whirlpool blend of NZ Wakatu, NZ Pacific Sunrise, 074, & Amarillo Hash. Fermented with Omega's Thiolized Cosmic Punch yeast. A heavy dry hop addition post fermentation of CGX(Cryo) Belma, Triumph, and GR Huell Melon. Finished up on the way to the serving tank with liquid dry hop Citra Spectrum! Tapped 3/9/23

A culmination of techniques and products learned over the years compiled into this annual juicy DIPA! Mash hopping, a small boil charge, and a blend of Cryo products and Phantasm in a low temp whirlpool make up our hot-side additions. Dip-hopped in the tank with Citra Lupomax, Citra Spectrum, and Cryopop, and fermented with Omega's Star Party Thiolized yeast. Dry hopped toward the tail end of fermentation with Cryo Meridian and Cryo Belma to help push those thiol aromas to the max! Tapped/Canned 1/25/23

Muscadine Monk Juice - 5% $8 14oz
This delicate beer was barreled in October of 2020 as a 4% Belgian table beer. We pitched some Brettanomyces and a mixed culture of other bacteria and microorganisms to the California Red Wine barrel! Fast forward 2 years, and this base was ready for fruiting. We racked the beer onto fresh hand smashed Muscadine grapes from Isom's Orchard is Athens, undergoing a final 3rd fermentation with the wild yeast from the grape skins! Tapped 11/23/22
